Cheesy Chicken and Rice

   Boil 3 cups of water.

   Add the rice and spinach to the boiling water and bring back to a boil.

   Reduce to a simmer and cover.

   Cook for 5 minutes, then remove from heat and let stand for 5 minutes.

   In a separate pan, heat the olive oil and cook the chicken until no longer pink.

   Mix the chicken and Velveeta into the rice and spinach.

   Serve hot.
