Cheesy Apricot Chicken

   Flatten chicken fillets to half a centimetre thickness between two sheets of plastic wrap.

   Place in a lightly oiled frypan and cook until golden brown on both sides.

   Combine the cream cheese spread, apricot halves, reserved juice, spring onions and spinach in a small saucepan.

   Cook over a low heat until heated through.

   Season to taste.

   Serve chicken with apricot sauce and salad.
