Cheese Tortellini With Corn Scallion Sauce

   In a medium skillet, combine butter and oil, heat over medium high heat; once butter begins to foam, add green onions and corn.

   Cook, stirring frequently, until the corn intensifies in color, about 2 minutes.

   Add the buttermilk and corn broth; bring to a boil, add tortellini and toss.

   Cover and reduce heat to medium; cook 4 minutes, stirring once or twice.

   Remove from heat, season with salt and pepper to taste, and garnish with Parmesan cheese, if desired.
