Ingredients: 2 c. lightly salted sweet onions, chopped medium; 2 sticks butter, melted; 3 c. scalded milk; 4 c. crushed saltines; 1/2 tsp. curry powder; 1 tsp. salt; 1 1/2 c. grated Cheddar cheese; paprika; 3 eggs, lightly beaten; Parmesan cheese; dash of red pepper

Servings: persons

2 c. lightly salted sweet onions, chopped medium
2 sticks butter, melted
3 c. scalded milk
4 c. crushed saltines
1/2 tsp. curry powder
1 tsp. salt
1 1/2 c. grated Cheddar cheese
paprika
3 eggs, lightly beaten
Parmesan cheese
dash of red pepper

Toss crackers with melted butter to coat well.

Add curry powder.

Line 11 x 16-inch pan with 3/4 of the cracker mixture. Spread onions over crackers.

Spread grated cheese over onions. Combine milk, eggs, salt and red pepper and pour over ingredients in pan.

Sprinkle on balance of crackers.

Top with light layer of Parmesan and paprika.

Bake 25 to 30 minutes in preheated 375u00b0 oven or until set.

Cut in squares to serve.
