Cheese and Grainy Mustard Sauce

   Melt the butter in the milk in a saucepan and bring to a good rolling boil.

   Put the flour in a food processor and, with the machine running at full speed, pour in the still bubbling milk.

   Process for 30sec, scrape down the sides of the bowl with a spatula and add the grated cheese, mustard, salt and pepper.

   Process for a further 30sec; serve.
