Charcoal-Grilled Chicken With Garlic

   Cut the chicken into serving pieces; peel 10 cloves of the garlic and chop them roughly.

   Marinate chicken in 1/2 bottle red wine with chopped garlic and 3 sprigs fresh thyme for 2 or 4 hours in the refrigerator.

   Spread remaining cloves of garlic, with the skins on, in a small baking dish in one layer and cover with the cup of olive oil.

   Sprinkle with salt and pepper and bake in a preheated 300u00b0 oven for 1 1/2 hours or until garlic is completely soft.

   Puree garlic through a food mill when it is done.

   Discard the skins and reserve the puree.
