Beat butter and granulated sugar in a large bowl with an electric mixer on medium speed until light and fluffy. Beat in eggs and vanilla. Gradually add the flour mixture, on low speed of the mixer, until well mixed. Cover and refrigerate about 2 hours, or until dough is firm and easy to handle.

Preheat oven to 400u00b0F. Shape dough into 1-inch balls; roll in additional granulated sugar. Place balls about 2 inches apart on ungreased baking sheets. Bake 6-8 minutes, or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks and cool completely.
