6 large chicken breasts, boneless and skinless
8 1/2 oz whole cashews
1 large onion chopped
1/2 cup yellow, red. and orange, sweet peppers
1/3 cup green bell pepper
1/4 tsp salt
1/4 tsp white pepper
1 tbsp minced garlic
1 1/2 cup mayonnaise
2 tbsp olive oil, extra virgin
1 1/2 tsp cilantro chopped

Slice the coloured peppers into rings.

Chop the bell pepper.

Cut chicken into bite sized pieces.

Heat oil.

Add chicken, white pepper, onions, garlic, peppers, and salt.

Stir well, keep an eye on it.

Stirring occasionally.

When chicken is done and onions are tender, remove from heat.

Drain excessive liquids a little bit is good to have.
