Pre heat oven to 180 C/ 350 F/ Gas mark 4

Chop the butter into cubes and set aside to room temperature.

Peel and grate the carrots and put them in a bowl and set aside

Blade the walnuts and almonds until finely chopped.

Grease your cake tin with butter and dust with flour.

Separate eggs into yolks and whites.

Whisk the butter and sugar together until fluffy and light.

Grate zest of 1 orange and squeeze the juice into the mix.

Whilst whisking, slowly add the yolks one by one.

In a bowl mix grated carrots, baking powder, and flour, and slowly fold the mixture.

Add the chopped nuts and spices into the batter.

In a separate bowl, mix the egg white with a pinch of salt, until firm peaks then fold into the cake mixture.

Put cake mix into the cake tin, and spread out well.

Bake for 30-40 minutes or until knife is inserted into the cake and comes out clean.

Cool the cake.

Meanwhile, make the cream....

Zest the lime and lemon and the second orange into the cream cheese.

Gently sift in the icing sugar and mix until smooth.

After the cake is cool.

spread the cream as a top layer of the cake.
