Preheat oven to 350 F. Thinly slice onions and toss them with the extra virgin olive oil, salt and pepper.

Transfer them into an oven-proof baking dish and roast them for about 20 minutes.

Make sure not to burn them.

You want a nice dark golden brown color.

Remove from the oven and set aside.

Increase the oven temperature to 375 F for the tart.

Lightly flour your working surface with all purpose flour.

Unfold the puff pastry sheet and roll into a square or rectangle and transfer to a parchment paper-lined baking sheet.

Spread a layer of the ricotta on the rolled pastry sheet.

Follow that with a layer of roasted onions* and caramelized Garden Jewels.

Garnish with a handful of low-fat mozzarella cheese and roughly chopped thyme leaves.

Bake for about 20-25 minutes or until golden brown.

Remove from the oven and let it cool for 10 minutes before serving.

* Add onions according to taste.

I used about 1/2 cup.

If you end up not using all the onions, set aside for another recipe.
