Name: Caramel Sandwich Cookies

Ingredients: 1 c. margarine; 1 c. sugar; 1 (3 oz.) pkg. cream cheese, softened; 1 egg, separated; 1 tsp. almond extract; 1/2 tsp. vanilla extract; 1/2 tsp. salt; 2 c. unsifted flour; colored sugars; 1 (14 oz.) can Eagle Brand sweetened condensed milk; 1/2 c. whipping cream (unwhipped)

In mixer bowl, beat margarine, sugar, cheese, egg yolk, 1/2 teaspoon almond extract, vanilla and salt until well blended.

Add flour; mix well.

Chill 2 hours on floured surface; knead dough to form a smooth ball.

Divide into thirds on floured surface; roll out each portion to 1/8-inch thickness.

Cut into desired shapes. Place on cookie sheets and brush with slightly beaten egg white and sprinkle with colored sugars.

Bake in 375u00b0 oven for 7 to 10 minutes.
