In a large bowl, combine apple juice and soy sauce.

Add the pork chops and flip to coat them.

Brine them in the refrigerator overnight or for at least 1 hour.

Preheat oven to 350 F.

Melt butter in a medium size skillet over medium heat.

Add sugar, salt, black pepper, cinnamon, and nutmeg.

Add apples, cover and cook until the apples are just tender (mine only took a minute or two).

Cook the sauce until slightly thickened.

Place the pork chops into a casserole dish in a single layer.
