2 lb. veal cutlets
2 tbsp. warmed sherry, md. dry
Salt and pepper, to taste
1/4 cup flour
3 tbsp. butter
1 tbsp. salad oil
1 onion, thinly sliced
1 cup whipping cream
1/2 cup seedless raisins, plumped in hot water and drained
1/4 tsp. sugar
1 tsp. chopped parsley

Pound cutlets with wooden mallet or meat cleaver until 1/4 inch thick.

Sprinkle with sherry and set aside for one hour.

Sprinkle cutlets with salt and pepper and dredge in flour.
