30 -35 large fresh mushrooms
14 lb Canadian bacon, diced

1 teaspoon minced garlic
½ teaspoon seasoning salt
½ teaspoon pepper
2 tablespoons vegetable oil
½ cup goat cheese or ½ cup feta cheese, crumbled
½ cup cheddar cheese, shredded

Remove stems from mushrooms and finely chop; set caps aside.

In large skillet, saute the mushroom stems, bacon, red pepper, onion, garlic, salt and pepper in oil until vegetables are crisp-tender.
