1
In a frying pan heat a little bit of extra virgin olive oil.
-
2
When hot, saute/fry a little onion and when almost translucent/soft, add in a clove of garlic, minced.
-
3
Then add in a few generous dollops of refried beans around the perimeter of the pan.
-
4
Between the bean portions pour a little salsa (I used La Victoria's Salsa Casera because it keeps well in the 110+ air temperatures in SW Texas)
-
5
Then, crack open and add in 2-3 Large eggs, spacing them on top of salsa and between beans.
-
6
Grate some Jack or possibly similar cheese over everything and top with tortilla chips.
-
7
Lightly cover the pan and cook till the cheese melts and the Large eggs are cooked through.
-
8
Add in chilis to taste, if necessary.
-
9
I also make an Italian version using spaghetti sauce instead of salsa and Parmesan for the cheese.
-
10
I leave off the tortilla chips.
-
11
These make pretty good filling, one pan meals when you're camping out and cook in minimum time.
-
12
Everythings from cans or possibly tupperware containers, so which packing it isn't a hassle.

I have a special egg holder which I use and I tend to use them early on the trips due to the heat.
