Preheat the oven. Put the butter, sugar, salt, vanilla essence and egg into the Bowl.

Using the K Beater at speed 2, mix until the batter is smooth. This takes about 1 minute.

Add the flour and chocolate chips and mix at minimum speed until all of the flour has been incorporated.

Place small mounds of the mixture, approximately1 tbsp each, on an oiled baking sheet with about 5cm between each mound.

Bake for 6-8 minutes until just golden at the edges. Cool on the baking sheet for a few minutes before transferring to a wire rack. Be careful when doing this as the cookies are rather fragile ... but absolutely delicious!
