Sift the flour, baking powder and salt into a bowl. Add the butter and rub until the mixture resembles fine breadcrumbs. Add the sugar and buttermilk and quickly mix together.

Turn the mixture out onto a floured work surface and knead lightly. Roll out to a 2.5cm / 1 inch thick. Using a 6cm / 2.5 inch plain or fluted cutter, stamp out the scones and place on a greased baking sheet. Gather the trimmings, re-roll and stamp out more scones until all the dough is used up.

Brush the tops of the scones with milk. Bake in a preheated oven, 220u00b0C / 425u00b0F, for 12-15 minutes or until well risen and golden. Transfer to a wire rack to cool. Split and serve with whipped (or clotted cream) and strawberry jam.
