1 c. buttermilk
1 Tbsp. vanilla
1 c. flour
1 Tbsp. baking pwdr
1 tsp salt
1 tsp cinnamon
1/2 tsp baking soda

1/4 c. walnuts, finely minced, optional
1 x egg
3/4 c. light brown sugar, firmly packed
1/4 c. unsalted butter, softened

Generously butter 18 large muffin tins.

Place on rack in center of oven.

Preheat oven to 400 degrees.

Blend oats, buttermilk and vanilla in a medium bowl and set aside.

Combine egg and brown sugar in large bowl; blend well.

Add in butter and beat for 1 minute.

Add in buttermilk mix and blend in well.

Add in dry ingredients and blend till flour is just incorporated; don't overmix.

Mix in berries.

Fill muffin tins half full; bake till muffins are lightly browned, about 15 to 20 min.

Turn out onto rack to cold.
