Buttermilk Fudge

   Combine first 5 ingredients in a buttered Dutch oven.

   Cook over medium heat, stirring constantly, until mixture reaches soft ball stage or candy thermometer registers 243u00b0; remove from heat. Cool to 180u00b0.

   Stir in vanilla.

   Beat at high speed with an electric mixer until mixture thickens and begins to lose its gloss.

   Stir in pecans.

   Pour into a buttered 8-inch square pan or baking dish; cool.

   1 1/4 pounds.
