Buttermilk Biscuits

   1. In a food processor, combine all the dry ingredients and pulse a few times to mix.

   2. Cut the butter into small pieces and add it to the food processor. Pulse several times to cut it in until coarse crumbs appear.

   3. Turn the mixture out into a large bowl. Add the shredded cheese at this point if you want it.

   4. Add buttermilk and gently mix until combined.

   5. Turn the dough out onto a floured surface and gently knead it to bring it together.

   6. Roll out the dough to a 1 inch thickness and fold it a couple of times. Repeat this rolling and folding process 2 or 3 more times.

   7. Roll out the dough into a 2 inch thickness. Cut with a round cutter or just with a knife.

   8. Place the pieces on an ungreased cookie sheet. Bake at 400 deg F for 15 minutes.
