Ingredients: 1 lb yuca peeled, large diced; 1/2 lb boniato peeled, large diced; 1/2 lb malanga peeled, large diced; 1/4 lb calabaza peeled, large diced; 3 x Large eggs; 1 tsp salt; 1/2 tsp star anise grnd; 1/2 c. all-purpose flour - (to 1 1/2); 1/2 c. canola oil for frying; 2 c. sugar; 4 c. water; 3 x cinnamon sticks; 3 piece star anise; 1 x lemon zested

1 lb yuca peeled, large diced
1/2 lb boniato peeled, large diced
1/2 lb malanga peeled, large diced
1/4 lb calabaza peeled, large diced
3 x Large eggs
1 tsp salt
1/2 tsp star anise grnd
1/2 c. all-purpose flour - (to 1 1/2)
1/2 c. canola oil for frying
2 c. sugar
4 c. water
3 x cinnamon sticks
3 piece star anise
1 x lemon zested

Boil all the vegetables till soft.

Drain and press through a food mill into a food mixer bowl, cold to room temperature.

With the paddle attachment, incorporate the Large eggs, salt and anise.

Stir while adding sufficient flour to create a dough which can be molded.

Roll dough into a rod and divide into 6-inch pcs.

Form figure eights from the pcs, and deep fry till golden.

Serve drizzled with Canela Syrup.

Canela Syrup: Combine all the ingredients for the syrup in a sauce pan.

Bring to a boil.

Reduce the heat to low and let simmer, uncovered, till the mix is the consistency of syrup, about 30 min.
