Preheat oven to 160 degrees C and line baking trays with baking paper.

Melt 200g of dark chocolate with the butter till smooth. Let sit for 10 minutes.

Place eggs, sugar and vanilla in a large bowl and beat till thick and creamy and pale.

Add in SRF and chocolate mixture into egg mix.

Chop remaining chocolate and stir through.

Set aside for 10 minutes.

Spoon 1 tbs of the batter onto the tray and leave space between the cookies as you spoon them due to spread.

Bake for 8-10 minutes or till puffed and cracked.

Allow to cool completely on trays.

Frosting: Beat cheese and Nutella till smooth. Add in icing mixture 1/2 cup at a time till desired consistency.

Frost cooled cookies on their back with 1 tbs of frosting and squish a similar cookie on top to make the cookie sandwich.
