   In a 2-qt saucepan, combine lentils, onion, garlic, the water, parsley, oregano, and basil.

   Bring to a boil.

   Reduce heat to simmer and cook for25 to 30 min.

   Pour into serving bowl to cold.

   In a small bowl whisk vinegar, oil, and salt.
