Preheat broiler.

Rub both sides of salmon steaks with oil and sprinkle with salt and pepper.

Place salmon on rack in broiling pan.

Place pan in broiler, 4 inches from heat source.

Broil salmon 5 minutes, then turn and broil until fish is just opaque throughout, about 5 minutes longer.

Salmon Steak Teriyaki: Prepare as above, omitting salt and pepper in Step 1.

In small saucepan, combine 6 tablespoons soy sauce, 1/2 teaspoon Asian sesame oil, 3 tablespoons brown sugar, 1 garlic clove, crushed, and 1 teaspoon minced, peeled fresh ginger; heat to boiling over medium-high heat.

Boil until mixture has thickened slightly, about 3 minutes.

Strain through fine-mesh sieve; discard solids.

In Step 2, broil salmon 3 minutes, then brush with glaze and broil 2 minutes more.

Turn steaks and broil 3 minutes; brush with glaze and broil 2 minutes more.

To serve, sprinkle with 2 green onions, cut on diagonal into thin slices.
