Brittany Nougatine Shortbread

   Preheat oven to 160 degrees Celsius.

   Using an electric mixer, beat the butter, egg yolks and sugar until creamy.

   Add the flour, crunchy nougat, salt and mix with your fingers to make a soft dough.

   Refrigerate for about 20 minutes.

   On a floured surface roll out the dough to a thickness of 4 mm.

   With a fluted cookie or biscuit cuter, cut out circles.

   Prick the dough with a small knife upside down.

   Arrange cookies on a baking sheet lined with parchment paper.

   Glaze the cookies with the remaining egg yolk, beaten with 1 tablespoon of water.

    Wait 5 minutes and glaze again.

    Decorate shortbread pricking with a fork, and bake for 8 -12 minutes.
