Ingredients: 1/2 c. Rice - raw; 1/2 lb Butter; 1/3 c. Flour; 1 quart Lowfat milk; 3 x Large eggs; 2 lb Spinach,cooked and minced; 1/4 c. Green onions, minced; 1 1/2 c. Feta cheese, crumbled; 1/4 c. Parmesan cheese; 1 Tbsp. Paprika Salt to taste Pepper to taste White pepper to taste

1/2 c. Rice - raw
1/2 lb Butter
1/3 c. Flour
1 quart Lowfat milk
3 x Large eggs
2 lb Spinach,cooked and minced
1/4 c. Green onions, minced
1 1/2 c. Feta cheese, crumbled
1/4 c. Parmesan cheese
1 Tbsp. Paprika Salt to taste Pepper to taste White pepper to taste

Cook rice according to directions, set aside.

Heat the butter.

Add in flour and stir till thoroughly mixed.

Cook about two min, then allow to cold slightly.

Add in mix to simmering lowfat milk a small amount at a time.

Whip to break up all the lumps then whip in the Large eggs till creamy and smooth.

Let simmer about 10 to 15 min.

Place spinach in bottom of 9 x 13 casserole dish.

Add in rice, feta, cheese and green onions spreading equally over spinach.

Salt and pepper to taste.

Pour cream sauce over top.

Sprinkle with parmesan cheese and paprika.

Bake at 350 degrees for 20-25 min.
