Prepare the bacon by cooking it in a skillet over medium heat until crispy.

When done, remove it from the skillet to a paper towel lined plate.

Slice enough brie to create a single layer of it for each sandwich (about 1/4 inch thick).

Spread about 1 tablespoon of apricot or peach preserves on one side of each slice of bread (more or less to taste).

Set two of the slices of bread on your work surface (preserves side up).

Assemble the sandwiches by layering the bacon, the brie, then the basil on top of both slices (be sure not to put cheese within a half inch of the edges, or it will ooze all over when in the panini press).

Top each with another slice of bread (preserves side in).

Grill in your panini maker on medium heat for 3-5 minutes!
