1
Cut pork into about 1 inch cubes
-
2
Mix meat coating ingredients
-
3
Put pork into meat coating, mix well
-
4
In a stir-fry pan, wok or skillet, on medium high heat, heat 2 tablespoons of vegetable oil.
-
5
Carefully add coated pork too hot oil.
-
6
Stir to keep chunks separated.
-
7
Once it starts to cook (about 2 minutes), you can move to the next step.
-
8
Mix sauce ingredients in a bowl, whisk well.
-
9
If you want a thick, closer to a glaze, use 1/2 cup water/stock.
-
10
If you like a little more sauce, use 1 cup.
-
11
I used 1 cup because that's the way we roll.
-
12
Keep stirring pork every minute or so.
-
13
Keep cooking until browned and done.
-
14
Ideally you are going for crispy outside, tender but cooked inside.
-
15
About 8-10 minutes.
-
16
Remove pork to a plate when done to your liking.
-
17
Add about 2 tablespoons vegetable oil to hot pan.
-
18
Place mixed vegetables in hot oil.
-
19
I used a premade vegetable kit this time.
-
20
Stir-fry vegetables for about 3-5 minutes, to more heat through than cook completely.
-
21
Add mixed sauce to vegetables.
-
22
Bring to a low boil, turn down heat to medium low.
-
23
Cover pan.
-
24
Let cook for about 3 minutes, then add pork back in.
-
25
Give it a good stir.
-
26
Cover and let simmer for about 5 minutes.
-
27
If you wish to add some peanuts, put those in 2 minutes before done, and stir.
-
28
We like ours over cooked brown rice, but noodles would work well also.
