Preheat oven to 425. line baking sheet with parchment paper.

Heat 1 tbsp. oil and Ghee in a skillet over medium heat. Add onions and sprinkle with salt. cook on low for 30-40 minutes until dark brown & caramelized.

Peel and chop sweet potatoes into bite sized pieces. place in a large bowl with the remaining 2 tbsp. oil and rosemary.

Cook sausage, in a separate pan, until browned. Add onions and sausage to bowl with potatoes and toss. season with salt and pepper.

Spread onto baking sheet, roast for 30-35 minutes (at 425)

place in cast iron skillet, making 3 small wells to crack eggs into. season with salt and pepper.

bake for 15-18 minutes until eggs are set.
