Pre heat oven to 350.

Brown sausage in a pan on med heat.

When browned, remove from heat and put 2/3 of the sausage on a paper towel to absorb the grease.

Spoon out all the remaining grease except for about 3 tablespoons.

Put the pan back on med heat and add the flour into the grease.

Stir while it browns, 3 to 4 minutes.

Add the milk, salt and pepper, stiring till thickened.

You can salt and pepper to your own taste.

Set the gravy aside and keep it warm.

Grease a 9 inch cast iron skillet.

Mix the pancake mix with the water.

Divide into two portions.

Poor one portion into the skillet.

Sprinkle the reserved sausage over the pancake mix.

Scramble the eggs with the 2 tablespoons of milk, salt and pepper.

Pour over the sausage and spread evenly.

Sprinkle the cheese over the eggs.

Bake for 10 minutes.

Remove the skillet from the oven and poor the remaining pancake batter.

spread evenly and bake an additional 10 minutes.

Invert onto a plate.

Cut the serving into 8 triangles as you would a pizza.

Place one serving onto a plate and top with gravy.

Stack on another serving and top again with gravy.

Serve warm.

Maple syrup can also be used instead of gravy or both!
