How to Prepare:Beat Large eggs yolks with 3/4 sugar.

Split vanilla bean in half lengthwise and using tip of knife, scrape out small black seeds.

Add in seeds and beans to half and half and bring to boil.

Stir small amount half-and-half mix into egg yolk mix, then return to remaining half-and-half mix.

Blend well.

Stir in whipping cream.

Remove vanilla bean.

Thinly shave chocolate and place in 13 x 9 inch baking dish.

Fill dish with cream mix.

Place dish in larger pan filled halfway with warm water.

Bake in water bath at 325 degrees for approximately 60 min, or possibly till set.

Coat surface proportionately with extra fine sugar and broil till sugar carmelizes.
