Blackeye Beans With Rice & Herb Salad

   Black eye beans; Place beans in a bowl & cover with cold water. Soak beans over night. Drain & rinse beans. Place beans in a pot with plenty of fresh water.Boil rapidly for 10 mins. Simmer for 45 /60 mins, 'till beans are tender. Add more water if required to keep beans covered while cooking.Let beans cool.

   Prepare dressing by whisking together the oregano,thyme,white wine viniger,olive oil,salt & pepper. Set aside.

   On a platter the 2 rices, tomato,capsicome, & corn. Add black eye beans & dressing. Mix, season with salt, pepper & fresh herbs.
