Ingredients: 1 c black beans, rinsed and drained; 2 Tbsp light olive oil; 1/2 c thawed and squeezed dry frozen spinach; 1/4 c applesauce; 2 eggs; 1 egg yolk; 3/4 c sugar; 3 Tbsp unsweetened cocoa; 1 1/2 Tbsp instant espresso powder; 3 oz chopped bittersweet chocolate; 2 Tbsp unsalted butter; 2 tsp vanilla extract; 1/2 tsp salt; 1/2 c flour; 1/2 c mini chocolate chips; 1/3 c pecans

2 eggs
1 egg yolk
3/4 c sugar
3 Tbsp unsweetened cocoa
1 1/2 Tbsp instant espresso powder

2 Tbsp unsalted butter
2 tsp vanilla extract
1/2 tsp salt
1/2 c flour
1/2 c mini chocolate chips
1/3 c pecans

1. Preheat oven to 350*F

2. combine black beans, olive oil, spinach, applesauce, eggs, yolk, sugar, cocoa, and espresso powder in a food processor. Pulse 1 minute until smooth.

3.Microwave bittersweet chocolateand butter in a glass bowl, stirring every 30 seconds.

4. Cool for 5 minutes.

5. Add chocolate, vanilla, and salt to food processor, blend. transfer to bowl.

6. stir in flour, mini chocolate chips.

7. pour mixture into an oiled 9X13 pan

9. bake 25-30 minutes, cool 15 minutes.
