Ingredients: 1 lb Bacon, julienned; 1 med Onion, diced; 2 1/2 c. Celery, diced; 3/4 c. CIDER vinegar; 1/4 c. DIJon mustard; 1 tsp Herbed seasonings; 1/2 tsp White pepper; 2 c. Sugar; 1/4 x Kitchen bouquet; 2 Tbsp. Cornstarch; 2 Tbsp. Cool water

Servings: persons

1 lb Bacon, julienned
1 med Onion, diced
2 1/2 c. Celery, diced
3/4 c. CIDER vinegar
1/4 c. DIJon mustard
1 tsp Herbed seasonings
1/2 tsp White pepper
2 c. Sugar
1/4 x Kitchen bouquet
2 Tbsp. Cornstarch
2 Tbsp. Cool water

Saute/fry bacon and drain off 2/3 of pan drippings leaving 1/3 third in pan.

Add in celery and onion and saute/fry.

Add in vinegar and turn up the heat to reduce by half.

Then add in the dijon mustard and seasonings, sugar, and kitchen bouquet.

Cook a bit then add in the cornstarch mix (cornstarch + cool water) Cook till thickened.

Cold.

Keep in glass jars.

Reheat in microwave and serve over greens
