Biloxi Catfish

   Begin by coating the bottom of the baking dish with olive-oil. Make sure the dish can accomodate all the fillets side-by-side, so they are not on top of each other.

   Mix all the ingrediants but the catfish in the baking dish, then add the catfish to the mix.

   Make sure the filets are fully coated, then add a pinch of oregano to the top of each one.

   -Cover with tin-foil and bake for 15 min.

   -Remove cover and spoon sauce over the filets, then place back in oven for an additional 5 min.

   -Total time in the oven is 20 min. Be sure and remember to put the brown-and-serve rolls in the oven at the appropriate time to have them ready at the same time as the meal. Most brands I've used take anwhere from 10-15 min.
