Ingredients: 4 T Butter; 2 1/2 C chopped Onion; 4 T minced Shallots; 1 # sliced Mushrooms; 2 T Brandy; 1 T Salt; 2 Eggs; 1 # ground Beef Chuck; 1 # ground Lamb; 1 # ground Pork; 3 T Dijon; 1-1/2 T Tomato Paste; 1 C Rolled Oats; 1/2 C Beef Stock; 1 C grated Cheddar; 1 T minced Garlic; 1 t Black Pepper; 2-1/4 t dried Thyme; 2 t Paprika; 1-1/2 t dried Oregano; 4-8 slices, parcooked bacon

4 T Butter
2 1/2 C chopped Onion
4 T minced Shallots
1 # sliced Mushrooms
2 T Brandy
1 T Salt
2 Eggs
1 # ground Beef Chuck
1 # ground Lamb
1 # ground Pork
3 T Dijon
1-1/2 T Tomato Paste
1 C Rolled Oats
1/2 C Beef Stock
1 C grated Cheddar
1 T minced Garlic
1 t Black Pepper
2-1/4 t dried Thyme
2 t Paprika
1-1/2 t dried Oregano
4-8 slices, parcooked bacon

Melt butter. Saute onion and shallots until just soft.

Add mushrooms and brandy, continue to saute until mushrooms are just soft.

Beat eggs. Add remaining ingredients (except the bacon).

Knead and form into a loaf on a parchment lined baking sheet.

Place parcooked bacon in a crosshatch fashion over the top.

Bake @ 375 for 1-1/2 hours, until internal temperature is 155.

Let stand for 15 minutes before serving.
