Blend cornstarch & cold water in saucepan. Add boiling water & cook, stirring until clear & thickened.

Let stand completely until cold.

Beat egg white on high til foamy. Gradually add sugar and beat until stiff, but not dry. Turn mixer to low speed and add salt and vanilla. Gradually beat in cold cornstarch mix, turn mixer to high speed & beat well.
