Heat waffle iron.

In a medium bowl, stir together the flour, lorn starch ( if you don't want to use the corn starch use 1 3/4 cup flour and skip using the corn starch ) baking powder, salt,and sugar.

In a separate bowl, whisk together the egg yolks, milk and butter.

Mix the dry ingredients into the wet ingredients all at once with a wooden spoon, until just combined. Do not over mix the batter; it should look lumpy.

Beat the egg whites in a bowl until stiff. Gently fold them into the batter.

For each waffle. Pour 3/4 cup of the batter( or the amount recommended by the waffle iron maker) onto the waffle iron; bake as directed. Serve hot off the iron, with maple syrup or fruit.
