heat your butter in a pot add diced onions, garlic, red peppers & all your seasonings your going to cook for 2 minutes.Now add your flour its going to look like wet mud a little thicker,you want to cook out flour taste about 2 minutes.

Now add in your softened cream cheese stir a bit.

Now add in your liquids keep whisking till it thickens.

Check your seasoning before you add last 2 ingredients.

once to your taste add in sour cream and cheese.

turn off when cheese is all melted and add your noodles stiring well to incorporate.

place into baking dish, top with bread crumbs optional bake 25min.

bread crumbs: old crusty french bread crushed pinch of garlic salt & 1/2 tspn parsley add to top of mac & cheese 1 tab butter chopped and added sparingly over crumbs and bake.
