1 1/2 pound grnd beef
3/4 c. fresh bread crumbs
2 egg whites, slightly beaten
1 teaspoon salt
1/8 teaspoon pepper
1 (10 ounce.) pkg. frzn minced spinach, thawed and liquid removed
1/2 c. shredded Mozzarella cheese
3 tbsp. grated Parmesan cheese

2 tbsp. ketchup

Combine grnd beef, bread crumbs, egg whites, salt, and pepper, mixing lightly but thoroughly.

Combine spinach, cheese, Italian seasonings, and garlic pwdr.

Place beef mix on waxed paper and pat into 14 x 10 inch rectangle.

Spread spinach mix over beef to within 3/4 inch of edges on all sides.

Roll up, jelly roll fashion, starting at short end of rectangle.

Place loaf, seam side down, on rack in open roasting pan.

Bake at 350 degrees for 1 hour.

Spread ketchup over loaf; continue baking 15 min.
