Beef With Barley and Sugar Snap Peas

   Brown ground beef in a skillet.

   Drain excess fat.

   I rinse it as well.

   Add it back to the pan and add mushrooms, onion, carrot, garlic and cook over medium heat until veggies are tender-crisp.

   Stir in broth, barley, salt, and pepper.

   Bring to a boil and reduce heat to medium low.

   Cover and let simmer for 10 minutes.

   Add peas and continue cooking for 2-5 minutes or until barley is tender.

   Stir in parsley.
