Beef Tenderloin Boursin

   for the beef, grill to desired temperature.

   in a pan, saute the onion until translucent and add in coke. let reduce and continue to cook until onions are a deep brown in color.

   combine the balsamic vinegar, brown sugar and jam in a pan over medium heat. simmer until reduced to 1/2. set aside

   roast the fingerling potatoes on the grill and toss with the chopped cilantro and salt

   slice the beef in half and stuff with the caramelised onion and top with boursin cheese. using a torch or broiler, melt the cheese and serve with potatoes and your choice of vegetable.
