Ingredients: 1 lb Ground beef; 1 medium onion, chopped (1/2 cup); 1/2 cup sour cream; 1 cup shredded cheddar cheese; 2 tbsp parsley flakes; 1/4 tsp pepper; 1/3 cup chopped bell pepper; 2/3 cup water; 1 tbsp chili powder; 1/2 tsp dried oregano; 1/4 tsp ground cumin; 2 Green chilies (optional); 1 clove garlic (finely chopped); 15 oz can tomato sauce; 8 or more corn tortillas

1 lb Ground beef
1 medium onion, chopped (1/2 cup)
1/2 cup sour cream
1 cup shredded cheddar cheese
2 tbsp parsley flakes
1/4 tsp pepper
1/3 cup chopped bell pepper
2/3 cup water
1 tbsp chili powder
1/2 tsp dried oregano
1/4 tsp ground cumin
2 Green chilies (optional)
1 clove garlic (finely chopped)
15 oz can tomato sauce
8 or more corn tortillas

Preheat oven to 350F Fahrenheit

Cook beef and onion til beef is brown, drain.

Stir in sour cream, cheese, parsley, and pepper.

Cover and remove from heat

In 2 quart saucepan, heat remaining ingredients to boil, them simmer 5 minutes.

Microwave tortillas to ensure they roll without tearing, then dip each tortilla into sauce mixture (cover both sides)

Spoon about 1/4 cup of meat mixture into tortilla, roll up.

Continue with the others.

Place, seam down, into an oven safe baking dish.

Pour remaining sauce over enchiladas.

Cover with cheese.

Bake 20 minutes, or until cheese is bubbly.
