Combine the beef, soy sauce and half of the oil in a medium bowl; toss to coat the beef in the marinade.

Meanwhile, place the noodles in large heatproof bowl. Cover with boiling water and let stand until just tender; drain. Rinse under cold water and drain again.

Combine the noodles in a large bowl with the onion, carrot, cucumber and herbs. Whisk the lime juice, sauces and remaining oil in a small bowl.

Drain the beef and discard the marinade. Cook the beef in a heated, lightly oiled medium nonstick skillet until browned both sides and cooked to desired doneness. Let stand, loosely covered with foil, for 10 mins, then slice thinly. Add the beef and dressing to the salad and toss gently to combine. Serve with lime wedges, if desired.
