6 slices bacon
1/2 large onions chopped
1/2 green green bell peppers
2 tablespoons flour, all-purpose
1 1/2 cups beef stock prefer veal stock if possible
1 x sage to taste
1 x salt to taste
1 x black pepper to taste
1 pound beef leftover rare, bite size
16 ounces black-eyed peas 1 can
1 pound noodles

Chop about 6 slices bacon and saute until crisp.

Remove and set aside.

Add minced garlic, 1/2 chopped onion and 1/2 chopped green pepper, lightly saute in the bacon fat.

Stir in about 2 tablespoons flour, stir until smooth.

Slowly stir in 1 to 1 1/2 cups beef stock.

Add leftover rare beef (bite size), 1 can black eyed peas and bacon crisp.

Simmer until cooked through, and serve over warm pasta with Parmesan cheese.
