Ingredients: 1 (540 ml) can black beans, drained and rinsed; ½ cup bick's sweet corn relish; 1 teaspoon cumin; 1 teaspoon chili powder; ¼ cup cilantro or ¼ cup parsley, chopped; 1 tablespoon lime juice; 1 jalapeno pepper, finely chopped; 2 green onions, sliced; ¼ cup prepared salsa; bick's hot pepper rings; 4 large flour tortillas; 2 cups cheddar cheese, shredded; sour cream and guacamole (optional)

1 (540 ml) can black beans, drained and rinsed
½ cup bick's sweet corn relish
1 teaspoon cumin
1 teaspoon chili powder
¼ cup cilantro or ¼ cup parsley, chopped
1 tablespoon lime juice
1 jalapeno pepper, finely chopped
2 green onions, sliced
¼ cup prepared salsa
bick's hot pepper rings
4 large flour tortillas
2 cups cheddar cheese, shredded
sour cream and guacamole (optional)

Combine first 9 ingredients in medium sized bowl.

Lightly oil grill or large frying pan and preheat to medium high.

Sprinkle 1/4 cup cheese on half of tortilla, cover with about 1/2 cup black bean mixture and top with another 2 tablespoons shredded cheese.

Place Bick's hot pepper rings over cheese and fold the remaining half of the tortilla over so that it form a half moon.

Place on hot grill.

Grill until the cheese is melted and bubbly, about 2 minutes.

Cut into wedges and garnish with sour cream and guacamole.
