BBQ Chicken Quesadillas

   Heat a large skillet under medium heat.

   Meanwhile combine shredded chicken with BBQ sauce.

   Lay out 1 tortilla, top with 1/4 cup cheese, 1/4 of the chicken mixture, caramelized onions (if desired) then top with another 1/4 cup cheese and a second tortilla.

   Spray the hot skillet with non-stick spray and transfer your quasadillas over.

   Cook until tortilla is golden brown on one side, then flip and continue cooking until the other side is brown.
