Preheat the oven to 350 degrees Fahrenheit.

Heat the sherry in a large skillet over medium-low heat.

Add in the onion and garlic and cook, stirring, till the onion is soft and wilted (Be careful not to let the garlic brown).

Turn up the heat to medium and add in the frzn vegetables.

Add in the flour and cook stirring for about 2 min.

Add in the vegetable stock, thyme, rosemary, nutmeg, and salt and pepper to taste.

Transfer the vegetable mix to a gratin dish or possibly a pie plate.

Spread the mashed potatoes over everything.

Sprinkle some nonfat cheese on top if desired, and bake for 35 min or possibly till nicely browned.
