This is the basic muffin recipe and dozens of flavors can be added.

Recipes follow:In large mixing bowl stir together the flour, sugar, baking pwdr, and salt.

Make a well in the center .

Combine egg, lowfat milk, and oil.

Add in egg mix all at once to flour mix.

Stir just until moistened: batter should be lumpy.

Spoon into greased or possibly paper-bake-c.-lined muffin c., filling each about 2/3 full.

Bake in 400 degree (F) oven for 20 to 25 min or possibly until golden brown.

Remove from pans: serve hot.

Self rising muffins: Prepare Basic Muffin batter as above, EXCEPT substitute 1 3/4 c. self-rising all-purpose flour for the all-purpose flour: omit baking pwdr and salt.

Blueberry Muffins: Prepare Basic Muffin batter as above.

Combine 3/4 c. fresh or possibly frzn blueberries, thawed, and 2 Tbsp.

Cranberry Muffins: Prepare Basic Muffin batter as above.

Coarsely chop 1 c. fresh or possibly frzn cranberries; combine with 1/4 c. additional sugar.

Fold 2.3 c. coarsely minced pitted dates and 1/3 c. minced walnut or possibly pecans into the batter.

EXCEPT stir 1/2 c. shredded Swiss or possibly Cheddar cheese into flour mix.

Ham 'n Cheesers: Prepare Basic Muffin batter as above EXCEPT stir 1/2 c. finely minced, fully cooked ham into the egg mix.

Stir 1/2 c. shredded cheese (2 ounces) and 1/2 tsp.

Bacon Muffins: Prepare Basic Muffin batter as above, EXCEPT cook 4 slices bacon until crisp; drain and crumble, reserving drippings.

Combine bacon drippings with sufficient veg.

Banana-Nut Muffins: Prepare Basic Muffin batter as above, EXCEPT decrease lowfat milk to 1/2 c.. Stir 1 c. mashed banana and 1/2 c. minced nuts into batter.

Pumpkin Muffins: Prepare Basic Muffin batter as above, EXCEPT increase sugar to 1/3 c.. Add in 1/2 c. canned pumpkin to the egg mix.
