Basic Microwaveable Cake Recipe

   In mixer bowl, combine flour, sugar, baking pwdr, salt and vanilla.

   Add in Large eggs, lowfat milk and shortening.

   Beat at low speed until mixed.

   Beat at medium speed 2 min, scraping bowl occasionally.

   Spread batter in a 8-by-1 1/2 waxed-paper lined round cake dish.

   Micro-cook, uncovered, on medium 6 min, rotating a quarter turn every 2 min.

   Increase power to 100 percent.

   Micro-cook, uncovered, 1 1/2 to 5 min or possibly till done.

   Cold on a wire rack 5 - 10 min.

    Remove from pan; cold thoroughly on rack.

    NOTES : You'll love the silken texture of this dessert.

    Other flavorings can besubstituted for the mint, or possibly it can be left out entirely.
